When I want tasty gluten-free pizza I head to Risotteria or Pala, but I can’t always do that when I get a craving for pizza (my wallet and schedule don’t allow it). So this week I set out to make my own. Don’t let the ingredients intimidate you…they can all be found at your local grocery store. All you need is a little patience (you have to par-bake the crust), and in under 30 minutes you’ve got a pizza that would fool your friends into thinking it’s nothing different.
I could have gone the traditional route and made mine with marinara sauce, fresh mozzarella and pepperoni but I wanted something a little different. For the past few weeks I’ve had figs on the brain…and my local grocery store had kale on sale for 99 cents a bunch…so I “Iron Chef’d” it in the produce aisle and came up with the below. My boyfriend was a little skeptical of the flavor combo but after one bite of my slice, he went for his own (even though he just returned from a work dinner)!
Ingredients:
Pizza Dough
- 3/4 cup gluten-free all-purpose flour
- 3/4 cup tapioca flour
- 2 TBL powdered milk
- 1 tsp unflavored gelatin powder
- 1 tsp salt
- 2 tsp xanthan gum
- 1 package active dry yeast
- 1 tsp honey
- 2 tsp olive oil
- 1 1/2 tsp cider vinegar
- 1/2 cup lukewarm water
Pizza Toppings:
- 1 cup skim milk ricotta cheese
- 6 slices prosciutto
- 1/2 cup thinly sliced dried mission figs
- 1 cup chopped kale, ribs removed
To Make:
- pre-heat oven to 400 degrees
- mix all dry ingredients together
- add honey, vinegar, olive oil and water
- mix together for 3 minutes
- scrape dough onto clean surface and sprinkle with tapioca flour
- shape into large ball and then roll out with rolling-pin
- place on baking sheet and par-bake for 5 minutes or until dough is firm
- remove from heat and spread ricotta cheese on top of crust
- place prosciutto slices on top, then sprinkle with chopped kale and figs
- bake for 10 minutes, remove from heat, slice and serve
