McKenzie Makes: Deviled Eggs!!!!

With Easter just a few days away I got into the spirit by making one of my grandmothers favorite foods in the world….deviled eggs. Synonymous with Easter,  substitute ingredients with the season and voila….deviled eggs anytime of the year! I had a surplus of herbs so I incorporated thyme, chives and basil and topped with smoked paprika for a little kick!

Ingredients:

  • 1 dozen eggs
  • 2 tsp dijon mustard
  • 1/2 cup mayonnaise
  • 2 tsp minced green onion (scallion)
  • 1 tsp Tabasco
  • 1 minced garlic clove
  • 2 tsp chopped thyme
  • 2 tsp chopped chive
  • 2 tsp chopped basil
  • salt and pepper
  • smoked paprika

To Make:

  • hard boil the eggs (look to here for instructions if you don’t know how to hard boil an egg)
  • peel the eggs and slice each egg in half, lengthwise
  • gently remove the yolk halves and place in a small mixing bowl
  • using a fork, mash yolks, mustard, mayonnaise, green onion, thyme, basil, garlic, chive, tabasco, salt and pepper
  • spoon egg yolk mixture into egg white halves and sprinkle tops with smoked paprika
  • Enjoy!
