So before you roll your eyes at the mere insinuation that I was able to freeze vodka (which I did) please note that vodka will freeze, but only under the right conditions (i.e. very little vodka, freezing in a blast chiller, liquid nitrogen).
My friend Lily moved out of the dark dungeon of hell that was her old apartment in the East Village and into a swanky new pad in Battery Park City. To celebrate the much-needed move, she threw a swanky housewarming party at her new pad that has a sick rooftop deck! So what’s a friend to bring to celebrate this momentous occasion!? I made it my mission to defy the laws of crystallization and make vodka popsicles!
With a large seedless watermelon and a bunch of fresh mint in the fridge, I set about to create a summery treat! With no real recipe to speak of, I created these poptails flying by the seat of my pants! They are super easy and you can make with or without vodka, and substitute literally any fruit puree for the watermelon to make a non-alcoholic or alcoholic frozen sweet!
Ingredients:
*Makes 9 medium poptails
- 6 cups fresh Watermelon (seeded and cut into small cubes)
- 6 ounces Vodka
- 1 bunch Fresh Mint
- 1/4 cup Fresh Lime Juice
- 9 Medium Plastic Cups
- 9 Popsicle Sticks
To Make:
- In a food processor (or blender) puree fresh watermelon to desired consistency (I prefer smooth with small chunks for some texture)
- Add lime juice and mint and puree for ten seconds
- Add vodka
- Pour mixture into plastic cups to 1/2 inch below top
- Place in freezer immediately
- After one hour, check to see if they have “set” if so, place popsicle sticks in the middle and return to freezer
- Let sit overnight or till completely frozen
- Enjoy!!!!
